Download the Demos. If they are in .zip format than you need to extract them with either Winzip or WinRaR.

If they are DM_2 format then you need to put them in c:/program files/call of duty/main/demos (<- Default directory, may differ).

If they are DM_3 format then put them in c:/program files/call of duty/uo/demos (<- Default directory, may differ)

[Note: I believe some UO demos are dm_2 format and need to go in the same place as the DM_3, but it is rare]

Once you have placed the demos in the correct directory open up the game of choice (CoD or UO) and bring down console (Tilde key: ~, some keyboards differ e.g ` key left of the '1')

Type...
/demo <<demo name>>
Replace <<demo name>> with the exact name of the demo without the extension. for example, if the demo is called Carentan1.dm_2 then type
/demo carentan1

There is also a program called seismovision that will automatically do this, but it is a dislike of many CJ members so I will not post the link ;)

Hope that helps :D
