You can just disable weapons with /cg_drawgun 0 (you can still shoot tough)
If you dont want to have it at all i cant help you

cg_drawgun literally just stop the gun from being drawn on the screen.

well i always use that since the only reason i dont want the gun in the screen is for like intro's of movies and for that it works fine xD
